Try to understand the scent and acidity of Modena balsamic vinegar, as well as its intensity and persistence. The smell of a good balsamic vinegar of Modena must be complex but balanced, strong but at the same time sweet and, above all, persistent.
If it smells musty or rancid it means that the balsamic vinegar you are tasting has not been stored in suitable containers.

In this phase, which is certainly the most important and qualifying stage of the product, you have to taste a small quantity (a little teaspoon). Once the vinegar has been brought to the mouth, press the liquid against the palate: in this way, the bouquet of perfumes and aromas will be released throughout the oral cavity. At this point, keep the balsamic vinegar in your mouth by sliding it evenly over the tongue and then inside the cavity of the mouth. Is the taste sweet but slightly acidic, aromatic and intense?
